INGREDIENTS

(Makes 6 muffins)

  • 2 bananas, mashed
  • Handful of spinach, finely chopped (optional)
  • 2 tbsps organic natural yoghurt (I like Yeo Valley’s Greek Style Natural Yoghurt)
  • 2 eggs
  • 2 heaped tbsps. Organic buckwheat flour
  • ½ tsp ground vanilla
  • Goji berries, to serve

METHOD

Preheat the oven to 180 degress Celsius/fan

Mash together all the ingredients until you have a consistency like cake mixture

Pour the batter into muffin cases (I like to use silicon cases for sustainability)

Bake for 20 minutes, until golden and springy to the touch
