INGREDIENTS
(Makes 6 muffins)
- 2 bananas, mashed
- Handful of spinach, finely chopped (optional)
- 2 tbsps organic natural yoghurt (I like Yeo Valley’s Greek Style Natural Yoghurt)
- 2 eggs
- 2 heaped tbsps. Organic buckwheat flour
- ½ tsp ground vanilla
- Goji berries, to serve
METHOD
Preheat the oven to 180 degress Celsius/fan
Mash together all the ingredients until you have a consistency like cake mixture
Pour the batter into muffin cases (I like to use silicon cases for sustainability)
Bake for 20 minutes, until golden and springy to the touch
